{"id":10443,"date":"2014-08-25T13:12:18","date_gmt":"2014-08-25T17:12:18","guid":{"rendered":"http:\/\/news.cos.ucf.edu\/?p=10443"},"modified":"2016-12-20T14:18:23","modified_gmt":"2016-12-20T19:18:23","slug":"salt-the-only-rock-we-eat","status":"publish","type":"post","link":"https:\/\/sciences.ucf.edu\/news\/salt-the-only-rock-we-eat\/","title":{"rendered":"Salt: The Only Rock We Eat"},"content":{"rendered":"<p><a href=\"http:\/\/www.eastendmkt.com\/events\/taste-of-science\/\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-10445 size-full\" src=\"https:\/\/sciences.ucf.edu\/news\/wp-content\/uploads\/sites\/29\/2014\/08\/A-Taste-of-Science-Eblast_AUG-e1408986973598.jpg\" alt=\"A-Taste-of-Science-Eblast_AUG\" width=\"250\" height=\"209\" \/><\/a><strong>What:\u00a0 Taste of Science Presentation &#8220;A Brief History of Salt:\u00a0 Beyond the Shaker on Your Kitchen Table&#8221;<\/strong><\/p>\n<p><strong>Who:\u00a0 <a href=\"http:\/\/anthropology.cos.ucf.edu\/people\/sinelli-peter\/\">Dr. Peter Sinelli<\/a> , UCF Instructor of Anthropology, specializing in Archaeology<\/strong><\/p>\n<p><strong>When:\u00a0 Thursday, August 28, 2014,\u00a0 6:30 p.m.<\/strong><\/p>\n<p><strong>Where:\u00a0 East End Market in Audobon Park<\/strong><\/p>\n<p>Today salt is as ubiquitous as sunshine.\u00a0\u00a0Across cultures, it is the most common condiment on the planet.\u00a0\u00a0Anywhere in\u00a0the industrialized world a\u00a0pound\u00a0of it can be had at the grocery for less than a dollar, and in winter trucks dump millions of tons of it on our roads\u00a0each time it snows just a little. \u00a0And because it is so cheaply added to almost everything we eat to enhance flavor, our own doctors tell us to limit our intake of it because we consume too much of it without even trying.<\/p>\n<p>But\u00a0until about a century ago, salt was one of the most prized commodities on Earth.\u00a0 Humble salt?\u00a0 Why?\u00a0 Because it is essential to\u00a0the biological function of all terrestrial vertebrates, including\u00a0<em>Homo sapiens<\/em>.\u00a0 Over time as a species, humanity\u00a0has demonstrated that it\u00a0can get along\u00a0quite nicely without agriculture, or fossil fuels, or even smartphones and Facebook.\u00a0 But we <em>literally<\/em> will cease to exist without a regular intake of sodium chloride.\u00a0 People need salt to live, and in past times when they did not enjoy the surfeit of it that we\u00a0have today, they did whatever was necessary to obtain it.<\/p>\n<p>The earliest states in human history trace their roots, in part, to\u00a0management\u00a0of this resource.\u00a0 The early Mesopotamian states and Chinese Dynasties funded their empires by controlling it, and fought wars with their rivals over\u00a0access to it.\u00a0\u00a0It was so valuable, even Roman Legionnaires were sometimes paid in it (indeed the Latin word for salt, &#8220;sal&#8221;,\u00a0is the root word for the English term &#8220;salary&#8221;).\u00a0 Salt built empires.\u00a0 Salt dominated commerce and\u00a0helped chart\u00a0the path of many modern Nation States.\u00a0 Salt made some people millionaires while simultaneously subjugating countless others to its world order, even amongst indigenous peoples in North America who lived well before Columbus.\u00a0\u00a0It is a fascinating little rock, and the human aspect of its story will be revealed at this discussion.<\/p>\n<p><a href=\"https:\/\/sciences.ucf.edu\/news\/wp-content\/uploads\/sites\/29\/2014\/08\/Pete-Sinelli-e1408986481347.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-10448 size-thumbnail\" src=\"https:\/\/sciences.ucf.edu\/news\/wp-content\/uploads\/sites\/29\/2014\/08\/Pete-Sinelli-e1408986546645-150x139.jpg\" alt=\"\" width=\"150\" height=\"139\" \/><\/a><\/p>\n<p>Dr. Sinelli is an instructor of anthropology who specializes in archaeology. He received his Ph.D. from the University of Florida in 2010.
